Avocado Crostini

These avocado crostini make a great canapé for a summer drinks party – or serve the avocado mixture in a bowl with the crostini on the side so guests can help themselves.
Perfectly ripe avocados need little accoutrement but this recipe can easily be adapted by adding lime, chilli, coriander, basil, fresh tomato or sun-blushed tomato, pesto, feta, mint, chives, finely chopped raw, marinated or smoked salmon or tuna, a drizzle of balsamic reduction, some parmesan shavings – experiment until you find your favourite(s)!

Date & Orange Scones

This recipe is from Treats From Little and Friday, which includes many of the Auckland bakery’s most famous creations. I’ve upped the orange content and dropped the topping of demerara sugar called for in the book (the bakery dusts them with icing sugar, which I prefer). This recipe uses cream and yoghurt, dispensing with the rubbing in of butter traditionally required for scones. If you wish to make things even simpler, skip the first step of soaking some of the dates – no preplanning required!

Fragrant Chicken Laab

If you have never tried laab – a flavour-packed minced meat salad from Laos that’s also eaten in Northern Thailand – you have got to try this recipe! Lime Butter

Bill Granger’s lime butter is the perfect partner to barbecued, baked, steamed or fried fish. It is so versatile it works with salmon, any white fish, clams, prawns, crayfish and mussels. Make a batch now while the limes are in season and more affordable, freeze, then in summer, brush it onto sweetcorn too. If desired, add finely minced coriander, chilli, ginger, garlic or kaffir lime to give it an extra kick.
