This bright and zingy citrus salad from www.foodiecrush.com goes beautifully with grilled fish or meats so is perfect for the barbecue table.
INGREDIENTS
1 fennel bulb, thinly sliced using a mandolin if possible
1 avocado, peeled and cut into chunks
2 grapefruit, peeled and segmented
2 handfuls lightweight greens such as rocket, baby spinach or watercress
shaved Parmesan
DRESSING
1/4c grapefruit juice
1/4c extra virgin olive oil
2 Tbsp balsamic vinegar
1 Tbsp minced shallot
1 Tbsp wholegrain mustard
1/2 tsp salt
freshly ground black pepper
DIRECTIONS
For the dressing, combine all ingredients in a jar and shake well to emulsify.
Place the fennel, avocado, grapefruit segments and greens in a large salad bowl.
Drizzle with 3-4 tablespoons of the citrus dressing and season with salt and pepper.
Top with shaved Parmesan and finely chopped fennel fronds.
