Some cakes just hit differently - and this one’s right up there with the best of them. Moist, zesty, and packed with citrusy goodness, this gorgeous bake by Nourish & Tempt is sunshine in slice form.
It all starts with the star of the show: one whole juicy orange. Not just any orange, of course - this cake uses our Gisborne-grown beauties, picked fresh from the orchard and delivered to your door in our premium fruit boxes.
Whether you’re whipping this up for afternoon tea, a special occasion, or just because- - you’re in for a treat. Here’s how to make your own dreamy orange cake at home:
1 whole orange (250–270g total weight)
⅔ cup runny honey
3 large eggs
1 tsp vanilla essence
1 cup almond meal
1 cup plain or gluten-free flour
1 ½ Tbsp poppy seeds
¾ tsp baking powder
¼ tsp baking soda
Start with the orange:
Pop your whole orange into a pot of cold water. Bring to a boil and boil rapidly for 10 minutes. Then drain, refill with fresh water and repeat this step two more times. It’s worth it - we promise! Once done, drain and let the orange cool.
Preheat your oven to 160°C and line a 20cm cake tin with baking paper.
Blend the cooled orange (skin and all) in a food processor until pulpy. Add honey and blitz again until smooth. Then blend in the eggs and vanilla.
In a large bowl, combine the almond meal, flour, poppy seeds, baking powder, and baking soda. Pour in your wet mix and gently fold together until just combined.
Pour into your prepared tin and bake for 40–50 minutes, or until a skewer comes out clean.
Top your cake however you like - we followed Nourish & Tempt’s lead and went with a dreamy mascarpone + honey combo, with a sprinkle of poppy seeds on top. Drool.
