10 lemons, washed and dried
1 litre vodka
2 cups sugar
2 cups water
Wash and dry the lemons. Using a vegetable peeler, peel the skin off all of the lemons. Try to peel just the skin and not the white pith.
Place the lemon peels into a large clean jar & pour in the full bottle of vodka. Pop the lid on & place in a cool dark place for 1 – 6 weeks to allow the lemon peels infuse the vodka. The longer you leave the lemons in the vodka the stronger the lemon flavour will be.
Place a strainer over a large bowl, pour the lemon vodka through the sieve to strain out the lemon peels.
Add two cups of water to a pot, stir in the sugar. Simmer for 5-6 minutes allowing the sugar to dissolve. Set aside to cool.
When the sugar syrup has cooled pour the sugar syrup into the lemon vodka and stir. Transfer the limoncello to a clean bottles. Store in the fridge for 1 month. Limoncello can also be stored in the freezer.
Chill the limoncello before drinking.
