Ingredients

Makes 4

¼ Watermelon approximately 500g

100 sugar syrup or agave (25g per serve)

1 cup fresh mint leaves.

120ml lime juice (30ml per serve)

White rum 200ml (50ml per serve)

Soda water to taste

Method

Cut the watermelon into quarters. Using a sharp knife remove the juicy watermelon flesh. Place the watermelon into a blender, blitz till smooth. Strain the watermelon juice through a sieve to remove the seeds and pulp.
If you are making four servings at once, you can prepare the cocktail in a large jug or single servings in a glass.
In a glass or jug add the mint leaves, lime juice and syrup, muddle together to crush the mint. If you do not have a muddle, use the bottom of a wooden spoon.
Add in the watermelon juice, white rum and ice.
Stir or shake the mixture together.
Divide the mixture between the glasses and top with soda water to taste.
Garnish with fresh mint leaves or watermelon.
