Makrut lime, previously known as kaffir lime, is widely used in Thai and Southeast Asian cooking for its intensely aromatic flavour.

The peel is commonly grated or finely sliced and used in curries, marinades, soups and sauces.

While the fruit contains only a small amount of juice, the zest carries the signature makrut lime aroma that chefs value in cooking.

Storage

Store makrut limes in the refrigerator to keep them fresh.

They can also be frozen whole or zested and frozen for later use in cooking.
