Apple Base

4 apples, peeled, cored and chopped

½ cup brown sugar

½ cup Biscoff spread

½ tsp cinnamon

70g butter

Biscoff Crumble

140g butter, melted

3 tbsp Biscoff spread

100g Biscoff biscuits, crushed

100g rolled oats

60g almond flour

80g almonds, sliced

½ tsp cinnamon

  • Preheat the oven to 180°C fan bake. Lightly grease a medium baking dish (a 9 x 9 inch square dish works well).
  • Apple base: Peel, core, and chop the apples into cubes. In a medium saucepan, combine the apples, butter, brown sugar, Biscoff spread, and cinnamon. Cook for 5–7 minutes until the apples have softened slightly and are coated in a glossy caramel sauce. Transfer to the prepared baking dish.
  • Crumble: Crush the Biscoff biscuits into fine crumbs. In a large bowl, combine the biscuit crumbs, rolled oats, almond flour, sliced almonds, and cinnamon. Stir in the melted butter and Biscoff spread until the mixture is evenly coated and crumbly.
  • Scatter the crumble mixture evenly over the apple base.
  • Bake for 25–30 minutes, or until the top is golden and crisp and the apples are bubbling underneath.
  • Serve warm with vanilla ice cream, whipped cream, or custard, and an extra drizzle of Biscoff spread and crushed biscuits.
