GreyStar avocados are a green-skin variety that stay green when ripe, unlike Hass avocados which turn dark. Once ready, they deliver a beautifully buttery texture and rich avocado flavour.

Avogrey® GreyStar avocados are a green-skinned avocado variety developed in Gisborne, New Zealand by David and Judy Grey.
They are known for their generous size, smooth creamy texture and rich, nutty flavour.
Unlike Hass avocados, GreyStar avocados stay green when ripe. Because of this, ripeness is best checked by gently pressing the fruit rather than relying on skin colour.
When ready to eat, the fruit will yield slightly when pressed and reveal beautifully creamy flesh that’s perfect for salads, toast, guacamole and everyday eating.
Avocados are delicious, creamy and full of healthy fats, but knowing when they’re ready to eat can take a little practice.
Identifying a ripe avocado
A ripe avocado will yield slightly when gently pressed but should not feel soft or mushy. Use the palm of your hand rather than your fingertips to avoid bruising the fruit.
Green-skin varieties will not change colour when ripe.
Check the stem
Gently lift the small brown stem cap on the avocado. If it comes away easily and you see green underneath, the avocado is ready to eat.
Storage tips
Unripe avocados should be kept on the kitchen bench or in a fruit bowl until they soften.
To speed up ripening, place avocados in a paper bag with a banana or apple.
Once ripe, avocados can be stored in the refrigerator where they will keep for another two to three days.
Cut avocados will brown quickly. To slow this down, sprinkle the exposed flesh with lemon or lime juice and store tightly wrapped or in an airtight container in the fridge.
If you have very ripe avocados, they can be mashed with a little lemon juice and frozen in airtight containers for up to six months.
